VEGETARIAN GOODNESS

Cooking up a delicious meal can really take the edge off the day. Food is such a primary need and when you take the time to prepare a meal I think it naturally soothes on some deep internal level because you are providing for one of the only things people can't do without..food. There is a special nourishment that comes from a home cooked meal. I love to experiment in the kitchen and make up my own recipes and I love the challenge of cooking up something great from only what I have available. I open up a bottle of wine, put on some music and go to town! Last night, my boyfriend and I both needed a little R&R so I foraged through the cupboards and fridge and came up with this...vegetarian (I'm a lifer) meal...SPICY GARLIC LENTILS, CARAMELIZED RED ONION POLENTA PIE, GORGONZOLA AND WALNUT BRUSSEL SPROUTS, and a warm French baguette with butter. For dessert I made RUM PEAR BREAD PUDDING with DULCE DE LECHE ice cream. Mmmmm..it was GOOD if I do say so myself! After dinner we cozied up next to the fire feeling nourished and happy and tucked in early. A lovely end to a long day.
